Vegan panini



A few tomato slices I used beefsteak tomato because it slices larger to fill the sandwich

Vegan Pesto sauce
Fresh Spinach
Vegan cheese
Fresh basil
Cashew cheese recipe (see below)
If you don’t have cashew cheese you can sub hummus
2 slices of bread, grain or sprouted your choice

Cashew cheese ingredients:
2 cups cashews soaked
1/2 cup nutritional yeast
1/3 cup water or more to make smoother
1 teaspoon lemon juice
Pinch sea salt

cashew cheese:


Soak nuts overnight. Drain liquid. Add yeast, lemon and salt to nuts. Add water and purée in blender. Add more water if you want it smoother and less water for a more chunky cheese!


Wash your ingredients and slice tomato and avocado.
Spread pesto on both slices of bread. I didn’t have any sprouted bread left, but will post that recipe when I make more!


Layer the tomato, vegan cheese and avocado slices. Put on the spinach and add one more tomato to contain it. Top with cashew cheese and last bread slice.


Beefsteak tomato

Place in George Forman grill or the like. You can use a toaster oven or a grill as well. The Forman is super easy and quick.


This panini is great for picnics. It’s easy to make, requiring little preparation and its so tasty!

You can make your own pesto if you like as well. I used ready made organic.

*Be careful of pre-made pesto because some contain dairy!
