Happy 4th of July! Hope you are having a great day! We are getting ready for fireworks, and our improvised barbecue since we don’t have a grill. We do have a Forman, so we are having veggie burgers, roasted potato, and veggies!
It’s super easy to make a veggie barbecue, and here is what we are using:
Veggie meat (I used lightlife found beef style, see below)
1 large onion
1/4 teaspoon-1/2 teaspoon sugar
Vegan cheese slices
Fresh romaine lettuce leaves
Burger buns (I used small slider buns)
Condiments of your choosing! I.E. ketchup, mustard, vegan mayo
Rosemary 1/8 teaspoon
Thyme 1/8 teaspoon
Oregano 1/2 teaspoon
Basil 1/4 teaspoon
Start by washing the veggies, potatoes, even the avocado, as it can have bacteria on the skin.
Preheat oven to 375•f
Leave the skin on the potatoes and slice in halves. Put in a small bowl and toss them with about 1/4 cup of olive oil and the herbs.
Take a lined sheet pan and spread the potatoes evenly. Then cover the pan with aluminum foil and bake for about 35-45 minutes, until potatoes slide off a tester and are a golden color.
In the meantime slice your onion in half and then into quarters. Slice half rings as thin as you are able. Heat a skillet and add a bit of oil. When it’s very hot add the onion and sugar. Let the onions simmer until they are translucent. Then give them a toss and cook them until they are caramelized, a nice rich brown color!
Slice the tomato and set aside. Pick a few lettuce leaves and set aside as well.
Now take the veggie meat and separate it into small sections. About a pool ball size. Roll it and flatten. Then put it on your skillet, Forman, or grill!
When it’s cooked to your liking, it’s time to assemble. Toast your buns! Add patty, cheese, condiments, lettuce, tomato, avocado and caramelized onions. The potatoes should be done as well.
Yummy! Who says vegans can’t barbecue?!?
We are a small group so didn’t go crazy with sides, but this would be great with corn on the cob and a fruit salad! And for dessert a vanilla cake with strawberries….mmmmm!
